Recharge with Crusted Halibut on Arugula Pesto
Nutrients in this dish rev energy and ward off illness ¼ cup panko¼ cup + 2 Tbs. ground walnuts4 Tbs. unsalted butter3 cups chopped arugula¼ cup Parmesan1 tsp. minced garlic⅓ cup + 3 Tbs. olive oil6 halibut fillets 1 Heat broiler to high. In skillet over medium heat, toast panko and ¼ cup walnuts 5 min. Transfer to bowl; mix in butter and a pinch of salt. In processor, purée 2 Tbs. walnuts, arugula, Parmesan, garlic and ⅓ cup oil. 2 Heat 3 Tbs. oil in large oven-safe pan over medium high heat. Add halibut; sear 8 min., flipping halfway.
