Easy Jambalaya
In 12" nonstick skillet, cook sausage, turning over medium heat until browned, 7-8 minutes. Remove; cool slightly. Cut into 1/4"-thick slices; reserve. In same skillet, cook chicken, turning, until browned, 3-5 minutes per side. Add rice mix, tomatoes, 2 cups water and reserved sausage. Bring to boil; reduce to medium-low. Cover; cook 25-30 minutes or until chicken is no longer pink, adding peas during last 10 minutes. Remove from heat; stir in capers. Servings: 6. Cals.: 491. Protein: 38 g. Fat: 19 g.
