1 1/4 lbs sweet potatoes, peeled and cut into 1/2-in. chunks
2 Tbsp vegetable oil
1 medium onion, finely chopped
2 chipotle chiles in adobo, chopped
3 cloves garlic, finely chopped
1 Tbsp ground cumin
2 tsp chili powder
Kosher salt
2 14-oz cans diced tomatoes
1 15-oz can pureed tomatoes
2 cups frozen shelled edamame, thawed
1 14-oz can no-salt-added pinto beans, rinsed
1 14-oz can no-salt-added black beans, rinsed Grated Cheddar cheese and sour cream, for serving
1 In glass baking dish combine sweet potatoes and 2 Tbsp water. Cover and microwave on High until tender, 12 min.
2 Meanwhile, heat oil in large pot on medium. Add onion, chipotles, garlic, cumin, chili powder, and 1/4 tsp salt and cook, stirring occasionally, 5 min. Add tomatoes and 2 cups water and bring to a simmer. Simmer, stirring occasionally, 15 min.
3 Add sweet potatoes to pot along with edamame, canned beans, and 1/4 tsp salt and simmer until beans are heated through, about 3 min. Serve topped with Cheddar and sour cream if desired.

Gingery Meatball Soup
ACTIVE 20 MIN. TOTAL 35 MIN. SERVES 6
1 lb ground pork
2 scallions, finely chopped
3 cloves garlic, finely chopped
1 1-in. piece peeled fresh ginger, finely chopped
Kosher salt and pepper
2 qts low-sodium chicken broth
8 oz snow peas, sliced
3 cups cooked white rice
1 Heat broiler with oven rack 6 in. from heat source. Line large rimmed baking sheet with foil.
2 In medium bowl, gently mix to combine pork, scallions, garlic, ginger, and 1/2 tsp each salt and pepper. Shape into bite-size meatballs (about 1 in. each); arrange in single layer on prepared baking sheet. Broil until browned, 5 to 7 min. (They will finish cooking later.)
3 Meanwhile, bring broth to a simmer in large pot on high, covered. Uncover; add snow peas, rice, and meatballs. Reduce heat to medium; simmer until meatballs are cooked through and snow peas are tender, 3 to 5 min.
WD TEST KITCHEN TIP
Switch it up! Instead of rice, add cooked noodles. Some good options are udon, soba, or rice vermicelli.

Tuscan Veggie Stew

3 Tbsp olive oil, plus more for serving
1 lb carrots, chopped
1 medium onion, finely chopped
2 qts low-sodium vegetable or chicken broth
1 bunch Tuscan or curly kale, chopped
4 oz stale or toasted bread without crust, torn into small pieces (about 4 cups)
2 14-oz cans no-salt-added cannellini beans, rinsed
1 14-oz can diced tomatoes
1 oz Parmesan cheese, grated (/3 cup), plus more for serving
1 Heat oil in large pot on medium. Add carrots and onion and cook, stirring occasionally, until vegetables begin to soften, 10 min.
2 Add broth, kale, bread, beans, and tomatoes and bring to a simmer. Simmer, stirring occasionally, until kale is tender, 15 to 20 min. Stir in Parmesan. Serve drizzled with additional oil and sprinkled with additional Parmesan if desired.
