Spicy chicken noodles With a few simple ingredients and plenty of veg, this is a good alternative to a takeaway. Serves 3-4 • Prep 10 mins • Cook 10 mins 2tsp sesame oil2 free-range chicken breasts, cut into strips1tbsp medium curry powder1 large garlic clove, crushed1tbsp fresh ginger, gratedSmall bunch spring onions, thinly sliced, plus extra to serve1 red chilli, finely diced2tbsp oyster sauce2tbsp soy sauce2tbsp rice vinegar250g shiitake mushrooms, quartered or sliced2 carrots, julienned or thinly sliced250g pak choi, leaves picked and some cut into wedges275g fresh egg noodles 1 Heat 1tsp oil in a wok or large frying pan over a high heat.
