ASK ANYONE what their favourite part of Christmas dinner is, and you’ll get the same answer: the turkey. Vegans will tell you it’s the nut cutlet or roast potatoes, but in their heart, it’s the turkey for them too. No Christmas dinner is complete without it. But few of us realise that just days earlier, the succulent meat swimming in gravy and cranberry sauce on our plate was a bird, alive and well and running around a farmyard or cramped, windowless shed. For hundreds of years, killing a living bird and preparing it for the table was all part of the cooking process. But in modern times, this grim job has been delegated to others so we only see the sanitised end result in the supermarket fridge or butcher’s window. So…
