I know purchasing tomatoes in winter is a controversial concept. I am not arguing that there is no flavor match for a summer tomato, freshly harvested and juicy as all get out. However, you can purchase tomatoes this time of year that have been locally grown indoors, and they are quite good. But the truth is, the tomatoes break down in this dish anyway, and they need not be the perfect, in-season specimens that I would recommend for, say, a tomato sandwich (my apologies to all tomato purists). I will say that the spices really make this dish; you have to like the spices.
