Bake up veggie sweet potato boats

Ingredients • 3 tablespoons olive oil• 2 medium sweet potatoes, halved lengthwise• Kosher salt• Black pepper• 1 medium broccoli crown, cut into florets• 1 small yellow or orange bell pepper, cut into 1-inch pieces• Half red onion, cut into 1-inch pieces• ½ cup cherry tomatoes• ¾ teaspoon smoked paprika• ¼ cup tahini• 1 tablespoon maple syrup• 1 garlic clove, grated• 1 lemon, half wedge• Pine nuts, for garnish (optional) Instructions 1. Heat the oven to 425° F. Use 1 tablespoon of the olive oil to brush the potato halves and season them with salt and pepper. Arrange on a baking sheet cut-side down.
