Carbohydrates are one of the three main nutrients in food, along with proteins and fats. Eating them gives you energy. They come in three forms – sugar, starch and fibre – and some foods contain all three. Sugars are simple carbohydrates because the body breaks them down quickly. Starch and fibre are complex carbohydrates because they take longer to process. Starch has to be broken into sugar before it can become energy.
