Growing rhubarb by candlelight Between Leeds, Wakefield and Bradford in England, there is an area known as the Rhubarb Triangle. There, in the spring, farmers “force” the rhubarb so it grows faster and produces softer, sweeter stems. In fact, it grows at around 2.5 centimetres per day – you can even hear the plants squeaking as they sprout. To force the rhubarb, farmers keep the plants in dark sheds and harvest the crop by candlelight. There were once more than 200 of these farms in the area but gradually rhubarb’s popularity declined. Now, it is back in fashion. One farmer said his rhubarb “goes everywhere”, including New York and Paris.
