Three traditions of Notting Hill Carnival

Food stalls There are more than 300 food stalls at the carnival, offering food from all over the world, but mainly Caribbean. The food most associated with the carnival is Jamaican jerk chicken – smoky, spicy chicken cooked over a flame. Sound systems First introduced to the carnival in 1973, there are now more than 30 sound systems playing music of all sorts, including ska, reggae, dancehall, calypso and hip-hop. Ska, reggae, and dancehall are rooted in Jamaican culture, and calypso has its roots in Trinidad and Tobago. Mas bands Mas (meaning masquerade) bands are part of the annual parade during the carnival, showing off costumes inspired by Caribbean and Brazilian culture.
