Store CUPBOARD SUMS Double-whammy herb jelly Chop five cooking apples. Put in a saucepan with 5 herb sprigs. Cover with 500ml water and 250ml apple cider vinegar. Bring to boil, then simmer, covered, for 25 mins until soft. Place a colander lined with muslin over bowl. Pour in pan contents and sit overnight. The next day, weigh collected juice, then pour into pan. Add a third of its weight in white sugar and juice of one lemon. Bring to a boil uncovered until 104-105C.
