PRESERVING THE SUMMER As the evenings draw in and the tights come out it’s easy to think of September as the beginning of the end. But wander through a veg garden or stroll among rural hedgerows in September, and you’ll realise that things are far from over. Tomatoes grown al fresco will ripen now, much later than those cosseted in a greenhouse. The lush summer herbs - basil, tarragon, mint, sorrel - have been soaking up August’s sunshine and are now at their greenest. Kale, carrots and beetroot are abundant, and sweetcorn, always a late bloomer for me, is just ready to harvest. And that’s just for starters. Wait until we get out of the garden and into the countryside. Dog walks are currently meandering, ponderous affairs for me thanks to Humphrey,…
