Give pickling a go

Pickling is a slow but rewarding process. These jars of pickled okra look very impressive, making ideal gifts if you can show the self-restraint not to munch them all first

Morroccan Road Pickled Okra Makes five 500ml jars 907g okra (ideally each one should be no more than 4 inches long 2½ cups (600ml) of white vinegar 2½ cups (600ml) water ¼ cup (72g) pickling or kosher salt 5 cloves garlic, peeled (1 clove per jar) 5 cinnamon sticks (1 stick per jar) 5 tsp coriander seeds (1 tsp per jar) 5 tsp cumin seeds (1 tsp per jar) 10 sprigs fresh mint (2 sprigs per jar) Five 500ml Kilner jars. 1 Sterilise five 500ml Kilner jars, lids and screw rings. Place the jars in a large stockpot filled with water and set over a medium-high heat. Bring just to boiling point, turn off the heat and set aside.
