Store CUPBOARD SUMS Chai masala tea blend Makes one small jar. You will need: 20 green cardamom seeds, crushed; 4 black cardamom seeds, crushed; 4cm cinnamon stick; 1 tsp fennel seeds; 4 cloves; 4 black peppercorns; ½ tsp ajwain (optional). Place all of the ingredients in a blender or food processor and blitz to a fine powder. Transfer the chai blend to a sterilised glass jar with an airtight lid. Keeps for up to one month in a cool, dark place.
