SECRETS OF OUR AUTUMN WOODLANDS

This season in particular brings a wealth of edible treasures to seek out beneath the canopy. Here’s a brief guide to what – and where – to forage

Bilberries (Vaccinium myrtillus) Often found in September in birch, oak or conifer woodlands, these small blue-black berries on low-growing shrubs are delicious in jams or tarts – or eaten straight off the bush. Sweet chestnut (Castanea sativa) Shiny, conker-like nuts in spiny green casings are dropped from October onwards. Delicious roasted, just remember to pierce them before cooking to stop them exploding. Not to be confused with (poisonous) conkers. Hedgehog fungus (Hydnum repandum) You must always be cautious when eating wild mushrooms, but this is one of the easiest to identify and therefore one of the safest. Look out for its creamy coloured, convex cap with white spines (not gills) beneath. Scrape off the spines before cooking. Dog-rosehips (Rosa canina) – with no one to deadhead the roses in the woods, their seedpods…
