Underrated spices to give a try – after all, you know what they say about variety…

Amchoor An Indian spice made from unripe, green mangos, which are sun-dried and ground. It’s a souring agent that introduces a liveliness to traditional chaat masala spice blends and lots of street food (bhel puri, samosas, aloo chaat). It might seem like an unusual or inconsequential ingredient that can be left out of a recipe, but if you find yourself mopping up the last vestige of a Hindi Belt dish, it’s often amchoor which is the magic ingredient. Caraway Liquorice-sweet seeds that have the earthiness of cumin with a peppery-lemon brightness – no wonder they were so popular in the early English kitchen.
