The secret to really good Greek Cypriot food is fresh produce and simple dishes. These recipes, handed down through the generations, are my Yiayia's (grandmother in Greek.) My dad kindly spent hours on the phone with his sister in Cyprus, copying down all the recipes for me, then he helped me to recipe test them, just to make sure that they tasted like ‘home'. I've adapted them slightly from the scribbled notes, as they included ‘a glass of this' and a ‘handful of that' and, like all inherited recipes – especially those created in the mountain villages where my family comes from – they differ slightly from village to village and island to island.
