WHAT IS FORCED RHUBARB?
Forced rhubarb is grown in complete darkness, usually in heated greenhouses or forcing sheds. The process involves the use of warm temperatures and a lack of light to stimulate its growth before it has had a chance to develop chlorophyll, which gives plants their green colour. As a result, forced rhubarb has a distinctive pink or pale red colour, tender texture, and a sweeter taste. Forced rhubarb is often more expensive and available for a shorter period, typically between January and March. You can grow forced rhubarb if you have an established plant. It’s generally forced in December or January, although you can do it until the end of March. To force the plant, clear around the base and add compost.
