WHAT IS FORCED RHUBARB?

Forced rhubarb is grown in complete darkness, usually in heated greenhouses or forcing sheds. The process involves the use of warm temperatures and a lack of light to stimulate its growth before it has had a chance to develop chlorophyll, which gives plants their green colour. As a result, forced rhubarb has a distinctive pink or pale red colour, tender texture, and a sweeter taste. Forced rhubarb is often more expensive and available for a shorter period, typically between January and March. You can grow forced rhubarb if you have an established plant.
