Oat cookies

I love an easy adaptable recipe for those spontaneous moments when you want to bake biscuits without having to go in search of ingredients. This is the basic version, but flours can be swapped (wholemeal or spelt) depending on what you have to hand, syrup changed for honey, a teaspoon of cinnamon added or raisins stirred into the mix, too. In the ‘70s, my mum used to make oat cookies and push half a glacé cherry or a chocolate button into the biscuits before baking them. Preheat the oven to 180C/Fan 160C/Gas 4.
