One-pan sweet chilli roast chicken Serves 4-6 6 skin-on, bone-in, chicken legs 600g red potatoes, cut into bite-sized pieces 2 red onions, quartered 8 sprigs of fresh thyme 2 carrots, peeled and chopped 200ml chicken stock 6-8 tbsp sweet chilli sauce Chives, chopped (optional) For the chicken seasoning: 2 tbsp light soft brown sugar 1 tbsp all-purpose seasoning 1 tbsp dried oregano 1 tsp black pepper 2 tsp salt 2 tsp onion powder 1 tsp smoked paprika ½ tsp cayenne pepper 4 tbsp olive oil 45g salted butter, melted Juice of 1 lemon 5 garlic cloves, grated 1 Start by combining all the chicken seasoning ingredients in a bowl.
