SHARP AND SWEET From the gloom of a British kitchen in January glows one saving grace – citrus. These globes of golden orange, sunshine yellow, bright green and pretty pink are at their best in winter and hold a whole summer’s worth of Mediterranean sun turned to sharp and sweet juice. Clementines have been in season since November, reaching their peak of perfection a little ahead of their stint as one of the scents of Christmas. However, the new year welcomes the brief but glorious season of blood oranges, with their stained-glass colours, honeyed mandarins, and Seville oranges, made for steaming up kitchens with the fug of bubbling marmalade.
