Melted cheese on a chilly February day not only lifts the spirits but is a great way to gather friends and family to share food. It’s time to kick back, chat and dip, around the centrepiece of a bubbling pot of oozy fondue. Take inspiration from the alps (and the ‘70s, too) for cold-weather comforts. Start with beetroot and salmon before gathering around the gloriously gooey cheese, supported with hearty platters of breads, veg and crispy roasties. There’s wine, kirsch or tea to sip as you dip, and generous portions of Black Forest gateau for pudding. This is winter sociability at its most relaxed – though not entirely without jeopardy. One Swiss tradition decrees that if you drop anything into the fondue pot, you then have to run around the house naked.…
