CUT OUT AND KEEP Cranberry mimosas A festive take on a mimosa – after all, why limit your cranberries to sauce? Serves 4 12 tbsp sweetened cranberry juice ½ unwaxed orange 4 sprigs of fresh thyme Chilled champagne, to top up 1 Set out four glasses and pour 3 tablespoons of cranberry juice into each one. 2 Squeeze a little orange juice into each glass, then muddle with a thyme sprig, leaving one in each glass. 3 Top with champagne just before serving. Bartender's note: For vegan imbibers, many brands of champagne are vegan friendly, but some do contain animal ingredients such as isinglass, so check before purchasing.
