Stem ginger shortbread With warming stem ginger, these tasty treats transport you to the holiday season in a single bite. Makes 20 100g unsalted butter 50g caster sugar 150g plain flour ½ tsp ground ginger 3 x pieces of stem ginger, diced 1 Preheat the oven to 200C/Fan 180C/ Gas 6 and line a baking sheet with baking paper. 2 Beat together the butter and sugar until pale and fluffy. Stir in the flour and ground ginger, then fold in the stem ginger until all combined. 3 Lightly flour a flat surface and roll out the dough.
