ALMOND SNOWBALLS Makes about 10 200g almond meal (or almond flour) 125g unrefined icing sugar, plus an extra 60g for dusting 80ml melted coconut oil 3-4 tbsp Frangelico or other hazelnut liqueur 1 Add the almond meal, 125g icing sugar and coconut oil to a food processor. Pulse until the mixture resembles coarse breadcrumbs. With the motor running low, gradually add the liqueur, one tbsp at a time, until the mixture starts to come together slightly. 2 Transfer to a small bowl, then use your hands to form the mixture into small balls. Place the extra icing sugar in a separate bowl, then roll the balls in the icing sugar until they are well coated. 3 Transfer to a plate, then place in a fridge to set for at least 30 minutes.
