MOCHI DOUGH A soft, slightly chewy, sweet rice dough to wrap your fillings up in. Makes 12 mochi 150g glutinous rice flour 120g sugar Pinch of salt Food colouring, optional Cornflour, for rolling 1 In a microwave-safe bowl, mix the glutinous rice flour, sugar and salt. Gradually add 200ml of cold water, stirring constantly to avoid lumps. If using food colouring, now’s the time to add it, drop by drop. Note that the colour darkens when cooked. 2 Cover the bowl with a lid or cling film and microwave for 1 min at maximum power. Stir lightly, cover, and microwave again for another 1 min.
