Bridging the gap Fish isn’t often thought of as a main event that you can stretch into several meals, but I’ve always been able to eek out more delicious morsels from the seafood I buy, making stocks, pâtés and saving leftover fish to bundle into meals ( fish cakes or fish pies) for the freezer. One of the most delicious things I’ve ever eaten was a fish pie made from leftover turbot that we had for Christmas one year. It fed us for days, and the fish pie was particularly stunning and was assembled similarly to the quirky Fish Pie Jackets here. We’re still in the ‘Hungry Gap’ at this time of year (before the first of the new season harvests are ready) and I used to wince at yet another cabbage…
