Saving money on the grocery bill doesn’t mean you have to sacrifice flavour or freshness. Here are some of Julie Goodwin’s cheap and cheerful mid-week dinners.

Chicken cacciatore SERVES 4 PREP AND COOK TIME 50 MINUTES 4 (600g) chicken drumsticks 4 (800g) chicken thigh cutlets ¼ cup (35g) plain flour 2 tablespoons extra virgin olive oil 1 large (200g) brown onion, chopped 2 cloves garlic, chopped 2 celery sticks, cut into 2cm pieces 2 medium (240g) carrots, halved lengthways, cut into 2cm pieces 1 teaspoon dried oregano leaves ½ cup (125ml) red wine 800g can crushed tomatoes 1 cup (220g) risoni pasta 2 tablespoons fresh flat-leaf parsley leaves 1 baby cos lettuce 2 medium (300g) tomatoes, cut into wedges ¼ cup (40g) black olives 50g fetta, to serve 1 Toss the chicken pieces in flour and shake off any excess.
