“Ask me anything about chillies,” Saahil Sharma tells me minutes into this interview.
“Which is the spiciest?” I ask.
“The Carolina Reaper,” says the co-founder of The SOS Kitchen, the business he started with his mother Shilpa Sharma in 2020, right before the Covid-19 pandemic hit, making ready-to-eat sauces. “But the only thing spicier than that is pure capsaicin used in pepper spray.”
This is only the tip of the iceberg when it comes to Saahil’s knowledge of chillies and the Scoville scale used to measure the pungency of chilli peppers.
