The BistroChat co-founder and COO wants F&B to focus on its cooking—and leave bookings to the machines

Having taken him from his home country of France to work in the US and then mainland China, the career of Alexandre Sonier had lain entirely in the realm of software engineering rather than fine dining. Yet it was during his time working in the tech hub of Shenzhen that Sonier would meet Hacene Taibi, and then connect him in turn to Xavier Besnault, an old university mate. The trio began furiously sharing ideas, hoping to land upon a start-up that could “make a change in the world”. Spoiler: they succeeded—in 2018, the three founded BistroChat in Hong Kong.
