Baked Chicken Meatballs Because my family loves meatballs, these are on the menu often. They’re fantastic as an appetizer or while we’re watching the game, but I love to turn them into easy dinners as well. Try adding them to soups, hoagie buns or spaghetti! —Haley Herridge, Columbus, IN Prep: 20 min. • Bake: 20 min. Makes: 4 servings ½ cup shredded Parmesan cheese½ cup dry bread crumbs1 large egg, lightly beaten2 Tbsp. olive oil½ tsp. salt½ tsp. garlic powder½ tsp. paprika2 tsp. minced fresh parsley or ½ tsp. dried parsley flakes½ tsp. pepper1 lb. ground chicken Preheat the oven to 400°.
