Mexican meatloaf pie with salsa SERVES 4-6PREP 20 MINS COOK 50 MINS 1kg beef mince 1½ cups fresh breadcrumbs 125g can corn kernels, drained 125g can red kidney beans, rinsed, drained ¼ cup chopped coriander leaves 1 egg, whisked 1 sachet taco seasoning mix 1 cup grated tasty cheese Chopped cherry tomatoes, avocado, coriander, red onion,  sour cream, lime  wedges, mixed salad  leaves, to serve 1 Preheat oven to 180°C. Grease a 22cm round springform pan and place on an oven tray. 2 In a bowl, combine mince, breadcrumbs, corn, kidney beans, coriander, egg and taco seasoning. Season to taste.  3 Press mixture into pan.  Sprinkle evenly with cheese. 4 Bake 45-50 mins until cooked through and cheese is golden. Set aside 5 mins, then drain excess juices.
