Upgrade a can of apricots into a delish dessert

Apricot and Malibu flummery SERVES 6 PREP 20 MINS + CHILLING 425g can apricot halves, drained 2 tbsp Malibu liqueur 300ml thickened cream 1 cup premium thick custard 2 egg whites 1⁄3 cup caster sugar TOPPING ¼ cup macadamia nuts, toasted, chopped 2 tbsp shredded coconut, toasted 4 dried apricots, thinly sliced 1 In a small food processor, puree apricots and liqueur together. 2 In a large bowl, using an electric mixer, beat cream until soft peaks form. Lightly fold custard through. 3 In a large bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually beat in sugar until foam is thick and glossy and sugar has dissolved.
