THE KITCHEN TOOL HE CAN’T LIVE WITHOUT. A wire cake tester. You can buy one for less than $5, but it’s invaluable. I use mine to ensure vegetables are tender, meats are warm in the center, and baked dishes are sufficiently hot. HIS BEST PREP TIP. Always toast your spices—it’ll coax out their flavors and aromas. Add anything from peppercorns to cumin to a dry skillet over medium heat, toast until aromatic (about 3 minutes for whole spices, 2 for ground), stir (to prevent burning) for another 45 seconds, and then transfer to a plate to cool before grinding or using.
