Chia & buckwheat pots Serves: 4 Prep + cook: 90 mins (+ cooling, standing and refrigeration) You will need to start this recipe a day ahead. Ingredients • ¾ cup buckwheat • ¼ cup raw cashews • ¼ cup sunflower seeds • ¼ cup pepitas • ⅓ cup apple juice • ¼ cup dried goji berries • 400ml can coconut cream • 1 tsp vanilla extract • 1 tbsp honey • ¼ cup white chia seeds • 250g strawberries, sliced • 60g blueberries Method 1. Combine buckwheat, cashews and seeds in a medium bowl, add enough cold water to cover. Stand overnight. Drain well. Add apple juice. Stand for 1 hour. 2. Preheat oven to 180°C.
