Banana oat pancakes Serves: 1 Prep + cook: 5 mins Ingredients • 2 eggs • 3 tbsp oats • 1 tbsp Happy Way Vanilla Whey Protein Powder • ½ banana • 1 tsp coconut oil • 2 tbsp coconut yoghurt • 1 tbsp maple syrup • ½ punnet fresh raspberries Method 1. Place eggs, oats, protein powder and banana into a blender and blend until a smooth consistency is reached. 2. Heat pan over medium heat. Pour coconut oil on pan. 3. Spoon ½ cup of mixture onto pan, cook pancake 1 min either side or until brown. 4. Top with coconut yoghurt, maple syrup and raspberries.
