Serves: 2 Ingredients • 1 bunch of broccolini, trimmed • 2 x 200g ocean trout fillets, skin on and bones removed • 2 tbsp olive oil • Juice of 1 lemon • Sea salt and freshly ground black pepper • Lemon wedges, to serve PINE NUT PESTO • 3 tbsp extra-virgin olive oil • 3 tbsp pine nuts, toasted • Handful of basil leaves • 1 garlic clove, very finely chopped • Finely grated zest and juice of 1 lemon • ½ tsp sea salt Method 1.
