2 tbsp whole milk
1 tbsp tomato paste
2 tsp ginger paste
1 tsp white wine vinegar
2 tsp chilli oil
1 tsp ground cumin
1 tsp ground coriander
Fine sea salt, to taste
8 eggs
Oil or ghee, for frying
8 slices of brown bread
TO SERVE
Roasted cherry tomatoes
Roughly chopped fresh coriander
METHOD
* Add the following ingredients to a mixing bowl: milk, tomato paste, ginger paste, vinegar, chilli oil, ground cumin and coriander, and salt to taste. Mix everything together well.
* Crack the eggs into the bowl and whisk thoroughly.
* Preheat a large frying pan on a low heat, then brush the pan with a little oil or ghee.
* Dip two pieces of bread into the bowl and soak them in the egg mixture, then place them both in the pan.
* Fry for 1 minute, then flip and fry for a further minute until the bread is golden brown all over.
* Repeat to soak and cook the remaining bread slices then enjoy with roasted tomatoes and a scattering of coriander!

Prawns with Indian five spice SERVES 4
INGREDIENTS
500g cooked prawns
2 ripe tomatoes
1 green chilli
2 tbsp ghee or vegetable oil
1 tsp fenugreek seeds
1 tsp brown mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds
½ tsp nigella seeds
2 tsp garlic paste
1 tsp ginger paste
1 tbsp shop-bought fried onions
1 tbsp tomato paste
½ tsp ground turmeric
Chilli powder, to taste
Fine sea salt, to taste
Large handful of fresh coriander
2 tsp mango powder
TO SERVE
Plain boiled rice (optional)
METHOD
* Remove the prawns from their packaging and pat dry with absorbent kitchen paper.
* Cut each tomato into about 8 thin wedges.
* Slit the green chilli lengthways.
* Place a wok on a medium heat. Add the ghee or vegetable oil, followed immediately by the fenugreek seeds, brown mustard seeds, cumin seeds, fennel seeds and nigella seeds. Fry for 1 minute.
* Now add the garlic paste, ginger paste, green chilli, fried onions, fresh tomatoes, tomato paste, turmeric, chilli powder and salt to taste. Stir-fry ...
