CHRISTMAS CLEMENTINE SPICED CHAI MIX

Turn leftover fruit peel into a fabulous warming drink

INGREDIENTS (SERVES 6-8) • Peel from 6 clementines• 2 cinnamon quills• 4 star anise• 30 cardamom pods• 1tbsp whole cloves• 1 tbsp black peppercorns• 1tbsp ground ginger• Breakfast tea, to serve• Coconut drink or tiger nut drink, to serve (or full-cream milk for non-vegans)• Honey or maple syrup (optional), to serve 1 Preheat your oven to 100°C/Gas ¼. Take the clementine peel and cut the pith away before spreading the peel onto a baking tray and popping in the oven. Bake for 1½-2 hrs until the peel has dried out and has started to curl up at the edges. 2 Crumble the peel into a bowl, along with broken-up cinnamon and star anise.
