María José San Román y su familia han inaugurado ya cuatro restaurantes y un obrador de pan, pero sin duda es Monastrell, creado en 1996, el que mejor refleja lo que siente, lo que mueve y lo que apasiona a esta chef. Ya en 2016, el restaurante se trasladó a un edificio histórico del puerto de Alicante, que se respetó al máximo, igual que el entorno portuario. Destaca por un interiorismo elegante, sobrio, bañado por la luz y energía del Mediterráneo. Sin duda, el mar ejerce su influjo en la atmósfera y también en su razón de ser: la alta cocina.
