PERSONAJE Nacido en la ciudad francesa de Chartres, LouisGabriel Fichet desarrolló muy pronto la pasión por la equitación, que le llevó a unirse al equipo nacional de salto de obstáculos. En el año 2001, se marchó de Francia para estudiar osteopatía en el Reino Unido. Tres años más tarde regresó a Francia, donde se orientó hacia la restauración, y se incorporó al grupo de Jean-Louis Costes como director de compras y responsable del control presupuestario. Más tarde abrió dos restaurantes en París junto a un socio. Al termino de esta aventura de tres años, Louis-Gabriel fundó su propia firma, F&B Consulting, especializada en la reestructuración de negocios de restauración.
