Saftig limpa, mjuka rågkakor, röda bullar eller knaprigt knäcke är bröd som passar lika bra till julbordets läckerheter som till frukosten.

SKÅLLNING Genom att rågmjölet skållas med kokande vatten blir brödet saftigt trots att det inte innehåller något fett. Skållad råglimpa Tack vare skållningen blir limpan väldigt saftig och håller sig länge. Den är god till det mesta på julbordet. 1 STOR LIMPA • 250 g rågmjöl, ca 5 dl• 500 g kokande vatten, 5 dl• 50 g jäst för söta degar• 1 dl ljummet vatten• 1½ tsk salt• ¾ dl mörk brödsirap• 1 msk finstötta brödkryddor (kummin, anis och fänkål)• 600 g vetemjöl special, 10 dl Gör så här 1. Väg upp rågmjölet i en stor bunke. Häll över det heta vattnet och rör om. Täck med plastfilm och låt stå minst 12 timmar. 2. Lös jästen i 1 dl ljummet vatten. Häll blandningen över rågskållningen.
