I grew up Mexican-American in Portland, Oregon, eating and enjoying American foods, but I also traveled to Tijuana every year to visit extended family, which exposed me to traditional Mexican foods. As a kid, I obsessively watched shows on the Food Network and Travel Channel. It made me curious to try other cuisines and new dishes. I was fascinated by food and the stories and experiences it inspired people to share. I became vegan when I was living in Hanoi in 2017. I started thinking of my health—reminiscing about a time when I was a clean-eating vegetarian a few years before, and how good I felt both mentally and physically.
