Ayam masak merah is a chicken dish in a spicy red sauce. It is a popular dish in Malaysia. I had an evil auntie that was friends with my mom when I was little and she made this dish all the time. It was the only thing I liked about her.

INGREDIENTS GRAVY: 3 cloves of garlic1” knob of ginger root2 shallotsLemongrass, bottom part only3 small tomatoes5 fresno chilesJasmine rice, for serving. BASE: 1 small white onion1” knob of ginger root1 clove of garlic2 bay leaves2 cloves2 whole star anise2 whole green cardamom pods1 tsp Kashmiri chili powder½ cinnamon stick8 whole raw cashews1 cup ketchup1 lb boneless chicken thighs (about 4)2 Tbsp vegetable oil INSTRUCTIONS TO MAKE THE GRAVY: 1 Peel and roughly chop the garlic and the ginger. 2 Mince the lemongrass so it can blend properly. 3 Remove stems and seeds from fresno chiles, and roughly chop with tomato and shallot. 4 Add all ingredients for the gravy into a blender and puree until smooth.
