RAKUICHI Owner Tatsuru Rai is a soba master who demonstrates his skill over the casual walk-in lunch and more formal kaiseki dinner service at this 11-seat noodle bar. “This was Anthony Bourdain’s favourite place in the world,” says Alexander—and it has become such a popular destination that you need to book dinner three months in advance. “If you want to come for lunch, you have to get there at 11.30am—don’t get there at 11.35am because you won’t get a seat,” adds Palmisano.
