“There’s nothing else like farming,” says Ellie Youngblood, who serves as the vegetable production manager at Sky High Farm, a Hudson Valley, New York, nonprofit founded by artist Dan Colen. “You are so challenged and humbled.” Five days a week, Youngblood and her team work a one-acre vegetable plot, growing everything from kale and collards to squash and tomatoes. One hundred percent of the farm’s yield is given to pantries, food banks, and other community programs throughout the state. Since 2011, Sky High has donated more than 87,000 pounds of vegetables and 50,000 pounds of meat and eggs. “What more could you want than to be able to grow food and have it end up in the homes of people who wouldn’t otherwise be able to access it?” says Youngblood,…
