SOTOL is a distinctive liquor that captures the essence of the American Southwest. It may be new to some people, but it has a long and rich history in the region. Sotol was a favorite drink in the saloons of the Old West and is often compared to tequila and mezcal, but it has its own distinctive characteristics and production methods that set it apart from its cousins. Sotol is a distilled spirit made from wild sotol plants (also known as the desert spoon plant or Dasylirion texanum), different from agave plants used for tequila and mezcal.
