From the mild and fruity to the intensely spicy, chillies can add a kaleidoscope of colours, flavours and fiery excitement to any dish. They have found their way into cuisines around the world, adding depth and complexity to countless recipes. Perennial plants often grown as annuals during the warmer months of the year, chillies grow easily from seeds kept warm during germination and plants can reach anywhere from 30cm to 3m tall. Believed to have originated in the Americas, chillies have a rich history dating back thousands of years. Archaeological evidence suggests they were domesticated as early as 6000 years ago in regions such as Mexico and Central America.
