As part of their natural cycle, plants go through a vegetative stage of growth, where the focus is on growing leaves and stems to gather energy through photosynthesis. This captured energy is stored to support future growth and reproduction. With many vegetables and herbs, we harvest the leaves, stems or roots during this growth phase. As the growing season ends, plants transition to their reproductive stage. They grow taller, develop flowering stalks and produce flowers and seeds.
