The Mediterranean diet is rated as one of the best in the world, thanks largely to its high vegetable and good fats content. Edible weeds and leafy greens are the hero ingredients in many Mediterranean dishes, from Turkish börek and Greek spanakopita to Italian spinaci alla romana. Little wonder then that the Greek word for vegetarian is hortofagos, meaning “weed eater”! Some of the most popular Mediterranean greens include endive, sorrel, mustard greens, chard, radicchio, chicory and amaranth. These and many other dark leafy greens are loaded with vitamins (A, C, E and K) and contain fibre, iron, magnesium, potassium and calcium.
